Crowd control, usually shortened to CC, is any effect that limits what a champion can do, from a small slow to a full stun. CC is the currency of teamfights in League of Legends, because a target that cannot move or cast is a target that dies, and almost every engage in the game starts with it.

How does crowd control work in LoL?
